Cedar Plank Mountain Meatballs

1 cedar plank soaked in water for 30min
1lb of lean ground beef
1 red onion …chopped
1 yellow onion chopped
½ cup of panko Japanese breadcrumbs
2 eggs. whole.
3Tsp Lea & Parrins Worcesrershire Sauce
¼ cup ketchup
2Tsp coriander
1tsp oregano
2Tsp paprika
1tsp chili powder
2Tsp garlic powder
3Tsp sea salt
3Tsp Pepper
6oz Parmesan Cheese
6oz Borgonzola Cheese (Danish Blue will do too)

Cabernet Ketchup

12oz of good quality Cabernet Sav
Reduce to half
Mix in
8oz ketchup
with 3 oz of Parmesan Cheese
3Tsp pepper

2 Portobello caps cut into fingers
1 red onion chopped
½ yellow onion chopped
3oz parmesan cheese
2tsp paprika
1tsp seasoning salt
3Tsp pepper

2 boneless skinless chicken breasts
1 jar of store roasted red peppers
5oz cream cheese
100g of capicolla ham
3Tsp cayenne pepper
2Tsp chili powder
3Tsp pepper
2Tsp paprika
1Tsp sea salt

BBQ Pesto Chicken Thighs

Sauce ++
4 pieces bone in chicken thighs
4 oz of store bought pesto
4 oz of store bought bbq sauce

Rub for the chicken
1 tsp thyme
1 tsp paprika
1 tsp salt
1 tsp pepper

Personal Clam Bake

Ingredients
3 rustic red potatoes
1 corn on the cob split into 1inch wheels
red onion cut in pieces
1 Italian hot sausage cut into half
1 roma tomato cut into 2 pieces
4 littleneck clams
4 PEI mussels (or whatever is in season)
1 4oz piece of Halibut or Cod
1 can of beer (preferably lager)
2 sheets of tinfoil
4 oz of spice mixture (see below)

Spice
1 tsp paprika
1 tsp thyme
1 tsp sea salt (layer the spice as you stack your tower!!)
1 tsp chili flakes
1 tsp celery salt
1 tsp pepper

Flat Bread
3 cups all purpose white flour
1 cup of water heated to 140 degrees F
1 Tsp salt
1 Tsp basil
1 Tsp white sugar
1 packet of quick rise yeast
1 Tsp olive oil
